Meatloaf with Homemade Ketchup

Meatloaf is about as homey as you can get. There is something so satisfying and comforting about meatloaf, even sliced cold into a sandwich. And homemade ketchup is a great option to control the ingredients in your meatloaf and adjust the flavor to your family’s tastes. Because white vinegar is made from grains, you can substitute apple cider vinegar.

Mise en place – Fancy French cooking words for everything in place. Having everything ready for the recipe makes cooking less stressful because you don’t find you are without a necessary ingredient or tool and trying to make last minute substitutions. As well, you are not stressed at trying to read a recipe, chop, stir, measure, mix, and brown all at the same time.

Step by step

  1. Preheat oven to 425.
  2. Thaw meat. I use 1 pound of beef and one of pork, but you can use only beef if you prefer.
  3. Chop an onion and a sweet bell pepper as finely or coarsely as you like. And add to a large mixing bowl with the meat.
  4. Add in eggs and coconut flour. Sprinkle flour around to avoid getting clumps.
  5. Add in ketchup ingredients — tomato paste, clove powder, cinnamon, garlic, dry mustard powder, maple syrup, vinegar
  6. Salt and pepper to taste
  7. Mix thoroughly, hands work really well for this
  8. Divide mixture between 2 regular sized unprepared loaf pans.
  9. Bake at 425 for about 45 minutes or until done.

Extra tips:

  • Allowing meat to come close to room temperature before cooking reduces cooking time and allows for more even cooking – no cold red middles with well-done exteriors.
  • Since you are already making dirty dishes, make a double batch. Use the extras hot or cold for lunch the next day. (Oh, boy does this make great leftovers!) Or freeze for a delicious homemade meal another day. Line a loaf pan with parchment paper before putting the mixture in it. Wrap the pan and freeze. Once solid, the loaf can be removed from the pan and more tightly wrapped or put into a freezer bag. It will be ready to thaw and bake in the loaf pan for an easy, healthy meal.
  • For picky eaters, who pick out bits of things they don’t like the looks of, run the veggies through the blender before adding to the meat mixture. You will probably want to add in another teaspoon or 2 of coconut flour.
